6 cups prepared juice from quince

6 cups water

1 box pectin

7 cups sugar

Remove stems and blossoms from fruit. Do not peel. Finely chop quince and remove core. Put into large pot and add water. Bring to a boil and simmer 10 minutes. Run all in a blender, cover and simmer five minutes more. Pour into cheesecloth and press gently to remove strain juice.

Measure 6 cups juice into a large pot, adding water if needed to make six cups. Stir in pectin. Bring to a rolling boil, stirring constantly.

Stir in sugar, bring to a boil and boil for one minute. Pour into hot sterilized jars and seal.

"I sometimes add a few red hot candies while boiling to give a little color and a slight flavor of cinnamon," Erma says.
