PENDLETON — The Round-Up City has a new establishment to catch your caffeine fix or a pastry. Winston and Kirbie Hill have opened Buckin’ Bean Coffee Roaster at 405 N.W. Despain Ave.

The couple are Eastern Oregon natives who moved back to wheat country after operating a coffee shop in tiny Craig, Alaska, on Prince of Wales Island. Kirbie Hill, 34, grew up in Baker City, and Winston Hill, 37, is the son of wheat farmer Fritz Hill of Pendleton. Moving back in March, the couple said, allowed them to be closer to family after they had their first child, a boy, Farley.

Kirbie Hill handles much of the counter work and Winston Hill roasts coffee on site using a state-of-the art Diedrich coffee roaster built in Sandpoint, Idaho. More than 1,300 pounds of green coffee beans in burlap sacks await an infrared roasting that he said takes just 15-18 minutes, depending on how dark the roast is.

The business opened Monday, March 23, and Kirbie Hill said they have relied on the power of word of mouth until now. So far, she said, the business has been solid, and the North Hill residents like the local coffee shop option, which has plenty of table space and leg room. And as the business develops, Winston Hill said they aim to bring on a lunch menu.
